Not even joking! You really do just whip this dish up. I seriously never even measured this recipe until I was writing this blog post. You know what? This is so simple that you almost can’t mess up as long as you DO NOT COOK IT TOO LONG.
Trust me. The sweet spot of what looks like uncooked batter in the middle is deceptive and you will be tempted to pop it back into the microwave. I did. DON’T DO IT!
I mean, it still tastes good. It’s warm cake made from peanut butter and banana so you know it can’t be bad. But what makes this desert epic is the oooey gooey lava. If you cook it for even 20 seconds too long you’ll loose that lava love.
Here are a few tips to make sure you get the perfect lava cake….
Choose a tall deep welled serving dish. You want it to be smaller on the bottom with sides gradually getting wider at the top. This cereal bowl and the square ramekins worked perfect. You could also use a small mixing bowl.
Have I mentioned how important it is not to over cook this? Since we cant be sure that your dish is the same as mine or that your microwave is calibrated the same, reduce the cooking time by 30 seconds. Nuke in 10 second intervals, checking the size of the lava center. You want it to be about the size of a quarter. The edges will puff up and the center will be gooey when its perfect.
15 seconds goes a long way in the microwave. The pics above show what a difference 15 seconds in the microwave makes.
This dish has to be served piping hot. Because cold lava is not good. So flip it over as soon as it comes out of the oven and serve immediately.
The individual servings are cute,but really are they always necessary? This’s is how I usually make it and it tastes just as good. Enjoy!
